We’re headed into the home stretch of summer here and it seems like the days are getting hotter and hotter versus showing signs of cooling down. I’m still trying to focus on getting in plenty of water each and especially on the days when I spend a lot of time outside or get dragged to boot camp by my neighbor. One of my newest favorites (besides cucumber lemon thyme) is pineapple ginger infused water.

I’m so glad that it’s time for me to share another cocktail recipe here on Just Us Four because this Plum Thyme Smash is so good it has to be shared! This drink was inspired by two of my favorite summertime events- a trip to our local orchard and my wedding anniversary.
I’ll get to how those two things resulted in the most delicious drink ever (hint, hint, it involves bourbon), but first let me introduce myself! Last week we ventured out to the local U-pick orchard in search of summer’s finest peaches, but instead we came home with a big basket of plums! We were making our way through the endless rows of peach trees when we spotted them- trees so loaded with ripe, purple plums that their branches touched the ground. Of course we snagged some peaches, but plenty of these juicy treats made their way into our basket too!

It just so happens that the very next day was also my 9th wedding anniversary (I’m still trying to figure out how nine whole years have flown by, whew). It was the middle of the week and going out to eat wasn’t an option, so I decided to bring the restaurant to us instead! I went all fancy-pants to impress my hubby and made a three course meal complete with a corn chowder starter, a main dish with sweet potato grits and ancho chili grilled shrimp, and finished it off with homemade peach sorbet.
Just like any fine restaurant, our meal needed a special cocktail to marry all of the flavors together. Bourbon is one of my hubby’s favorites and since we had an abundance of fresh plums, I decided to combine the two and see what I could shake up.
This Plum Thyme Smash is a refreshing way to let summer linger on just a bit. You can use any variety of plums (I’ve tried it with two different varieties and both were equally tasty). Aside from the fresh plums and bourbon, there is another element that makes this drink so tasty- a homemade thyme infused simple syrup. The tangy plums mixed with herbal, fresh, earthy thyme makes for a truly unique flavor combination

We practically live outside during the summer months. If it isn’t storming, I try to grill just about every dinner we have. From burgers to fruit, there isn’t much I won’t cook on the grill. I’m a huge fan of wine. But, during the summer, I usually choose a good cocktail over my standard glass of wine in the evening. A brunch event recently, I was introduced to an aperol spritz which is a compbination of aperol, sparkling wine and club soda. Happy Monday! Typically Mondays are the days that I share my latest paleo recipe with you. Today is a little different because while the post is actually a paleo recipe, I am actually sharing my new favorite drink.
See…I really just don’t like water. I wrote a whole thing about my problem with water awhile back and ways that I try to drink more water. But, I still tend to fail majorly at drinking enough water.
Focusing on eating healthier is great but it needs to go hand in hand with paying more attention to the liquids I put in my body too. My current favorite {well besides my daily latte which I’ll probably never give up} is cucumber lemon thyme spa water.

For as long as I can remember, iced tea has been a part of my way of life. Both of my grandparents, along with so many people in our town, worked for a company that produced tea when I was a child. We never had a meal where iced tea wasn’t the beverage of choice. Of course, being in the south, the tea was sweet but it was always present. Now, as I am a “northerner,” the tea might be a little less sweet than I grew up with but I still love iced tea. Pure Leaf makes it easier to enjoy that fresh brewed glass of tea taste without all the actual brewing on my part. For summer, we like to combine our iced tea into cocktails and one of my absolute favorites is a lemon ginger iced tea mojito.
