Our fall season is always super busy with school, sports, family activities and trying to spend a ton of time outdoors before it turns too cold. I adore fall foods like pumpkin, squash, and sweet potatoes. But, while we love all the comfort foods that fall brings, I find it can be difficult sometimes to cook some of those meals in the time we have. Plus, we are trying to eat a little healthier and add in lots of vegetables where possible into our diet. Raise your hand if you love veggie noodles? Do you see my hand waving high in the sky? I am a huge fan of vegetable noodles and love making them with zucchini, squash, carrots and even beets. My other weakness are spicy Thai noodles from our local Thai restaurant. I love getting to combine my favorite “cheat day” flavors with my goal to eat more vegetables and that is exactly what this these 10 minute Thai veggie noodles do.

I love egg rolls. So much so that I may have hidden the last one from my entire family the last time we ordered take out so that I could have it. I have never made them at home though and, honestly, not sure I would have the patience to roll them up and fry them. Instead, I make my own Chinese pork egg roll in a bowl which has all the yumminess of an egg roll with almost none of the work! Perfect solution for an easy dinner recipe!
