Mondays during the summertime are always a little tougher. We spend a ton of time outdoors enjoying the pool or just hanging with friends so it is always a little harder to get back into the grind of the office. Of course, it doesn’t help when I also have wine slushies around the house either. So, in addition to resetting myself back into work mode, I also try to reset my body back in better eating mode. In our house, we do paleo meals Monday through Friday and then allow ourselves to indulge on the weekends. To me, it really is the best of both worlds. I don’t have to give up my cocktails and nachos, but I still give my body really good, real food for most of the week. This week, chipotle chicken with avocado salsa is on my menu.

For the last 2 years or so, my husband and I have a great Sunday night tradition – nachos. Now, we don’t eat them every Sunday, but when we do, it’s a joyous evening. We started making them when we would watch Game of Thrones on Sunday night, and it slowly became our thing. When I was pregnant last year, nothing was getting between me and my Sunday night nachos, but now in the last year or so, it’s not such a regular occurrence. However, when I do make nachos, I do it right. Layer upon layer of chips covered in delicious cheese and fresh ingredients. When I was putting together this post for the Just Us Four readers, I knew I had to step up my game…in came the Jalapeno Ranch. Jalapeno Ranch is awesomely delicious, and I knew putting it on top of these nachos would be a hit. Of course, everyone loved the Jalapeno Ranch Black Bean Loaded Nachos….
Ok, you guys…I am about to give you the easiest and most delicious weeknight meal you can make. A bonus: it is paleo too {if you care about that kind of thing}! Seriously, I make this on Sundays and then I grab a little for breakfast with a poached egg or Mathlete will have it for dinner with rice {yes, we still keep rice in our mostly paleo kitchen} when I am gone. I can’t tell you much we love our paleo sausage and vegetables!

Happy Paleo Monday! Are you ready to start this week off right with a delicious paleo recipe? I definitely am! Right now, the weather here is crazy how which means I want to spend as little time cooking in the kitchen as physically possible. So, I pick things that cook fast to make dinner quick and easy. It is grilling season! Once the weather turns just the slightest bit warm, we break out the grill and it doesn’t get put away until the snow starts to fall. Grilled chicken kabobs are one of our favorite dinners and this mustard balsamic verion wins top billing on our summer menu.

I’m in love with a waffle maker. Is that weird? I certainly hope not because I’m not willing to break up with it anytime soon. Ever since I made my paleo lemon poppyseed waffles, I can’t stop making waffles. This time I am going savory though with my newest obsession: Paleo Southwestern Waffles.

You know how they say that a stomach is a way to a man’s heart? In my case, tacos would definitely be a good way to try and go after my heart. From bang bang shrimp tacos to turkey tacos and cranberry salsa to pineapple pork tacos, I just can’t get enough.
