One of my favorite things about spring and summer is the beginning of the Farmer’s Market. Saturday mornings are filled with strolls through the two closet looking for delicious fruits and vegetables. One of my recent visits was the inspiration for a quick one dish meal: Chicken Sausage and Vegetable Saute.
What You’ll Need:
– 3 Bell peppers
– 1 squash
– 1 zucchini
– 1 medium onion
– 3 tsp fresh rosemary, finely chopped
– 2 tsp olive oil, divided
– 1/2 tsp crushed red pepper
– 1 tsp chopped garlic
– chicken sausage links
– 1/4 cup water
Let’s Make It:
1) Heat 1 tsp oil over medium heat in saute pan. Add chicken sausage and brown on both sides, 2-3 minutes per side. Add 1/4 cup of water and reduce heat to low. Simmer, partially covered over low heat, for 10 minutes or until almost the water is evaporated. Set aside.
2) While the sausage is cooking, cut your veggies {I slice the squash/onion and chop the peppers}.
3) Heat remaining 1 tsp of oil over medium heat. Add onions and peppers. Saute for 3-4 minutes. Add squash, garlic, rosemary and red pepper.
4) Serve peppers with cooked sausage. Add rice if desired 🙂
