Weeknights are crazy in our household. I try to skip take out and limit eating out to once per week so having easy to make dishes that come together quickly are a must. On top of that, they actually need to taste good too so my family will eat them. That can be a tall order unless we want to eat spaghetti every night! This chicken and vegetable coconut curry is perfect for the times when I need something on the table fast that also tastes great.
So, of course, there has to be some sort of secret or trick to having a coconut curry done in under 30 minutes. My secret: Imagine® Culinary Simmer Sauces. What You’ll Need:
2 boneless, skinless chicken breasts, cut into 1-inch pieces
1 Tbsp avocado oil
1 sweet potato, peeled and cut into 1-inch pieces
1/2 onion, sliced
1/2 cup frozen, cut green beans, thawed

Cooked rice
Let’s Make It:
1) Heat oil in pan over medium heat. Add onion and sweet potato and cook for 3-5 minutes. Add chicken and cook for an additional 5 minutes or until no longer pink.
2) Add green beans and simmer sauce to pan. Reduce heat to medium-low and simmer for 5-7 minutes or until all ingredients are heated through. Serve over rice.
