I love egg rolls. So much so that I may have hidden the last one from my entire family the last time we ordered take out so that I could have it. I have never made them at home though and, honestly, not sure I would have the patience to roll them up and fry them. Instead, I make my own Chinese pork egg roll in a bowl which has all the yumminess of an egg roll with almost none of the work! Perfect solution for an easy dinner recipe!
For my egg roll in a bowl, I start with Smithfield® Prime Fresh Pork because not all pork is created equal. Smithfield Prime Fresh pork is gluten free and contains no artificial ingredients. Ingredients for Chinese Pork Egg Roll in a Bowl:
1 Smithfield Prime Fresh Pork Tenderloin (about 2 lbs), cut into 1-inch cubes
2 Tbsp oil
1/2 cup water
1/4 cup brown sugar
2 tsp salt
1 tsp Chinese five spice powder
1/4 Tbsp soy sauce, divided
2 tsp minced garlic
1 tsp grated ginger
2 cups shredded cabbage
1 cup shredded kale
1 cup shredded Brussels sprouts
1 cup shredded carrots
1/4 cup green onions
Let’s Make It:
1. Heat 1 Tbsp oil in a large skillet over medium heat. Add pork and cook until browned on all sides.
2. Stir in water, brown sugar, salt, Chinese five spice powder and 2 Tbsp soy sauce. Cook for 1-2 minutes. Stir in garlic and ginger and cook for an additional minute. Remove from pan.
3. Add remaining 1 Tbsp oil to pan. Add cabbage, kale, Brussels sprouts and carrots. Cook for 2-3 minutes. Stir in pork, including juices, and cook until cabbage mixture begins to wilt. Remove from heat and stir in green onions.
Note: To make this gluten free, substitute tamari for the soy sauce. For paleo, substitute coconut sugar for the brown sugar and coconut aminos for the soy sauce. Also, add 1 tsp of fish sauce.
Sometimes my family likes a little bit of crunch like they would get in a traditional egg rolls. So, I simply brush an egg roll wrapper with a little oil and bake it for 5 minutes until crisp. Then, they can break it up and put on top of their egg roll in a bowl.
