This lemon chicken soup is the perfect solution to a cold, winter day or when you are feeling under the weather!
When you have two kids in school and regularly commute to work using public transportation, colds and other viruses become all too familiar. I love my kids but they are like little germ machines during cold and flu season and this mama always seems to bear the brunt of it. When I catch that first inevitable cold, I always head straight to the store for ingredients to make my cold busting lemon chicken soup.
The lemon juice in this chicken and rice soup adds such a delicious brightness to the comforting classic flavors of chicken soup. Plus, lemon is packed with vitamin C and helps break up mucus that so often comes along with a winter cold.
Ingredients for Cold Busting Lemon Chicken Soup:
1 Tbsp butter
1 onion, diced
2 cloves garlic, minced
3 stalks O Organics celery, sliced
4 O Organics carrots, peeled and sliced
1 Tbsp oregano
Salt and pepper
6 cups O Organics chicken broth
2 cups O Organics Quick Cooking Rice
2 cups cooked, cubed O Organics chicken breast
¼ cup lemon juice
Lemon slices
Let’s Make It:
1. Melt butter in large pot over medium heat. Add onion and cook for 2-3 minutes. Add garlic and cook for an additional 1 minute. Stir in celery, carrots, and oregano. Cook for 2-3 minutes. Season with salt and pepper.
2. Stir in chicken broth and bring to boil. Reduce heat and simmer for 10 minutes.
3. Add rice and cook for 8 minutes. Stir in chicken breast and cook for an additional 2 minutes. Remove from heat and stir in lemon juice. Top with lemon slices before serving.
The combination of the lemon and oregano in this soup is amazing. Grab a rotisserie chicken to make this super quick and easy to make.
I am not a huge fan of celery so often leave it out of recipes for myself. If you don’t care for it either, feel free to replace it with fennel for a crunch with a different flavor.
I used a rice blend in my recipe but you can use any quick cooking rice and it will work fine. If you are using a white rice, be sure to rinse it well!

nstead of coriander, try the healtthier parsley.
Add carrots and leek or celery to your soup for even more nutrition. The greener the veggies, the better.
