My kids love freeze dried fruit. From raspberries to bananas, they eat a ton of it (in addition to fresh fruit, of course). The absolute best place to get it near us is Trader Joe’s so we spend a fair amount of time there buying fruit. Of course, no trip to Trader Joe’s is complete with a jar of cookie butter. We bring two jars home: one for eating with a spoon and the other to make Cookie Butter Cheesecake Bars.
These cheesecake bars start with crushed cookies for the crust and then are topped with delicious cheesecake swirled with biscoff cookie butter. They are the perfect little treat and a great way to use cookie butter in your desserts!
By the way, what is cookie butter? Cookie butter is usually made up of crushed speculoos or biscoff cookies, sugar, a fat like condensed milk or butter, and flour. Think of a nut butter and just substitute the nut for cookie crumbs. It has a creamy and smooth consistency and tastes delicious!
These cheesecake bars are guaranteed to be a huge hit with everyone. I love how easy they are to make for parties or just for everyday too. If you can’t find Biscoff cookies, you can use two and a half cups of graham cracker crumbs instead.
Or pick up the cookies from Trader Joe’s that they use to make the cookie butter. They make a great substitute too!

- Baking dish
- Parchment paper
- Mixing bowl
- Food processor
Grab your jar of cookie butter and make these Cookie Butter Cheesecake Bars right now! They are super easy to make and ridiculously delicious!
- 2 packages Biscoff Cookies crushed into crumbs
- 9 tbsp Butter melted
- 16 oz Cream Cheese softened
- 1 cup Sugar
- 3 Eggs
- 1/2 cup Sour Cream
- 1/2 cup Cookie Butter

Preheat oven to 350 degrees. Line a 9×9 baking dish with parchment paper. Set aside.

In a bowl, combine crushed cookie crumbs with melted butter. Press into the bottom of the prepared baking pan. Bake for 10 minutes. Remove from oven and let cool.

In a food processor, combine cream cheese, sugar, eggs and sour cream. Process until smooth. Pour over cooled crust.

Put cookie butter in a microwave safe bowl and microwave for 30 seconds. Stir until smooth. Drop by tablespoons onto cheesecake mixture and swirl with a knife.

Bake in oven for 45 to 55 minutes or until set. Refrigerate for one hour before slicing.

Wondering what size package of cookies? My store carries the 8.8oz and thats ALOT of crumbs/crust for a 9×9 pan. Theres no way the filling will fit. Thinking of trying one package cookies and a half recipe of filling?

My package was 8.7 oz. Once they were crushed, it didn’t make the crust that high.

Cookie butter is like peanut butter only it is made with cookies. You can buy it from trader joes or from most grocery stores (called Biscoff Spread).

9×9 open is way too small. 13×9 makes the right bit size and thickness. Cook times need to be adjusted as well
