You guys…do you know what happens when you are so busy that you can’t think straight? You buy two times the amount of some ingredients thinking you hadn’t already gotten them. I was baking my white chocolate cranberry oatmeal cookies for our Girl Scout bake sale and bought the dried cranberries twice. So, I decided to create this delicious cranberry apple slaw to go with our dinner that night to use some of them.
This cranberry apple slaw is a perfect side dish for just about any meal and would be spectacular for your holiday meal too. Going to visit friends? You can easily throw this together in advance and take it as your contribution to the meal.
Ingredients for Cranberry Apple Slaw:
8 cups shredded cabbage
¾ cup sliced almonds
1 cup dried cranberries
1 Granny Smith apple, cut into 1-inch pieces
½ cup basil, coarsely chopped
Salt and pepper
Dressing:
1/3 cup avocado oil
¼ cup apple cider vinegar
2 Tbsp maple syrup
1 Tbsp Dijon mustard
½ tsp kosher salt
1 shallot, minced
Let’s Make It:
1. Add shredded cabbage to large bowl. Season with salt and pepper. Add almonds, cranberries and basil.
2. In a small bowl, whisk together oil, apple cider vinegar, maple syrup, mustard, and kosher salt until well combined. Stir in shallot. Pour over cabbage and toss to combine. Store, covered, in refrigerator, until ready to serve.
