Breakfast is always the most difficult meal for me. During the week, I am at work by 6am and my body definitely doesn’t feel like eating before that. So, I always need something I can take with me to work and enjoy later. Since I leave so early in the morning, these also need to be things I can put together the night before and grab on my way out of the door. In preparation for our recent trip to New York, with a 6:30am train trip, I put together an easy yogurt parfait the night before and it was delicious.
One of the main ingredients in my yogurt parfait also happens to be one of my favorite nutrition bars. I keep Zone Perfect Perfectly Simple bars in my bag all the time in case I am out and need a snack. They actually came in really handy during our Black Friday shopping marathon too. They come in some amazing flavors like Almond Toffee Crunch {my favorite} and Roasted Cashew and Dark Chocolate.
Easy Yogurt Parfait Ingredients:
6 oz Greek yogurt {I used vanilla}
1/4 cup dried fruit {I used dried cherries}
1 Zone Perfect Perfectly Simple bar, chopped
Let’s Make It:
1) Divide yogurt in half. Spoon 1/2 into an airtight container. Add dried fruit and snack bar on top. Spoon remaining yogurt on top. Refrigerate until ready to eat.
I use small mason jars for these and it is perfect. I recently found some plastics ones that I love because they aren’t quite as heavy as lugging glass ones to and from the office.
