Our love for Tex-Mex style food runs deep in the Just Us Four household. You can see from just about every What to Cook Wednesday that has been written on here that we love our Mexican inspired food.
I’ve been a little bored with our standard chicken and beef options recently though. Plus, my kids have discovered a love of fish sticks and breaded fish fillets at school. So, I set out to make a weeknight dinner that combined our love of Tex-Mex and our new found fondness of fish. The result: a customizable option that is adult and kid friendly!
I got the idea for these fajitas while running into the store to pick up a few items on my way home from work. I was in the frozen food aisle grabbing rice and saw the stir-fry mix:
My kids don’t really get into stir fry at all but I liked the idea of veggie mixes with most of the work done for me {hello, weeknight meal saver!} so I grabbed the pepper and onion mixture. Add in some frozen fish and a great meal comes together in less than 30 minutes!

What You’ll Need:
– 1 bag Birds Eye pepper stir-fry mix
– 1 bag Birds Eye baby gold and white corn
– 1 box Mrs. Paul’s breaded fish fillets or fish sticks
– 2 tsp chili powder
– 2 tsp cumin
– fajita size tortillas, flour or corn
Extras
– Pico de gallo
– Cilantro
– Southwestern ranch dressing
– Shredded cheese {I use the Mexican blend}
– Sour Cream
Let’s Make It:
1) Cook fish fillets or fish sticks according to package directions.
2) Heat saute pan over medium heat. Add pepper stir-fry mix, corn, chili powder and cumin. Cook, stirring occasionally, for approximately 10 minutes until fully heated.
3) Place tortillas between two lightly moistened paper towels. Heat in the microwave for 20-30 seconds.
4) Divide pepper mixture between the tortillas. Top with fish fillets and desired toppings.
The toppings I chose:
– Pico de gallo
– Fresh cilantro
– Southwestern ranch dressing
We are usually happy with just fajitas but you could easily expand this by adding some Spanish rice and red cabbage salad (mix shredded red cabbage with 2 Tbsp white vinegar and 1 Tbsp sugar) for a delicious meal.
