I’m a pumpkin lover. I actually eat pumpkin all year round and not just during the fall. But, when fall hits, I start adding pumpkin to just about everything {like cookies, dips, french toast and even hummus}. My most recent pumpkin tinkering came when I was making a queso dip for an upcoming fall party. Usually I just make my world’s best queso dip {seriously, that is not an exaggeration} but I wanted to try something new. So, I made pumpkin queso dip instead.
The best part, besides the pumpkin, about this dip is that it only takes 5 ingredients to make. It comes together so quickly and easily that it is the perfect last minute party recipe.
What You’ll Need:
1 Tbsp butter
1/3 cup finely chopped green bell pepper
1/4 cup finely chopped onion
10 oz nacho cheese dip
1 cup pumpkin
Let’s Make It:
1) In a saucepan, melt butter over medium heat. Add bell pepper and onion and cook for about 5 minutes, or until softened.
2) Stir in nacho cheese dip and pumpkin. Reduce heat and cook for 5-10 minutes or until heated through. Do not boil.
I served this dip with some crackers, chips and fresh vegetables and it was a total hit. The pumpkin added the perfect amount of creaminess to the dip but didn’t add any sweetness at all. Plus, this way, I am sneaking some healthy vegetables into our party snacks.
