I was never a huge meatloaf fan. Mostly because I always felt like it took way too long to cook for what you got. But, I am totally in love with meatloaf muffins (see these and these) and these feta turkey meatloaf muffins are my absolute new favorite easy weeknight dinner.
I’m going to share a secret with you about these feta turkey meatloaf muffins; they have zucchini in them too. I am really big on getting vegetables into my recipes whenever I can and love it when I can sneak some by my kids too.
Ingredients for Feta Turkey Meatloaf Muffins:
1/2 Tbsp oil
1/2 onion, diced
1 carrot, finely chopped
1 zucchini, shredded
1/4 tsp salt
1/8 tsp pepper
1/2 tsp oregano
1 lb ground turkey
1 egg
1/2 cup panko crumbs
1/2 cup crumbed feta
1/2 cup marinara sauce
Fresh basil
Let’s Make It:
1. Preheat oven to 375 degrees. Lightly grease muffin tin or link with paper or silicone liners. Set aside.
2. Heat oil over medium heat. Add onion and carrot and cook for 1-2 minutes. Add zucchini and cook for 2-3 minutes. Season with salt, pepper, and oregano. Let cool slightly.
3. In a large bowl, combine turkey, egg, cooled onion mixture, panko crumbs, and crumbled feta. Divide mixture between prepared muffin cups. Top with marinara sauce.
4. Bake for 20 minutes in preheated oven. Top with fresh basil before serving.
When I am in a hurry, I skip the cooking of the vegetable mixture and just squeeze the extra moisture from the zucchini before mixing everything together. It definitely still works and is a great way to get this to the table even faster!
