Hello Just Us Four enthusiasts! I am honored to be guest posting for Shannah. My name is Karissa and I blog over at Sweet as a Cookie where I share recipes full of all things sweet. As you probably could have guessed this is my favorite season, baking season that is. Today I will be sharing with you a recipe that spruces up an old classic.
We’ve all had Rice Krispies treats as a child. They’re by far one of my favorite simple treats. They have this gooey and crunchy texture that just makes you want more and more. My base recipe involves more butter and more marshmallows which makes the whole treat even more delectable.
Where I live it’s officially winter. Okay, according to the seasons it’s not but according to mother nature it is. Right now we have about a foot and a half of snow on the ground and the air is very chilly. To warm up I usually have a cup of something warm. For most of us that cup is usually full of hot chocolate. I personally don’t like to drink hot chocolate but I do enjoy the hot chocolate flavor.
For this recipe I took my base recipe for Rice Krispies treats and added in hot chocolate mix and mini marshmallows. These treats will be sure to knock your socks off. They take the flavors of winter and compact them into a bite sized treat.
Ingredients
4 and 1/2 tablespoons butter
1 and 1/2 teaspoons vanilla extract
1 and 1/2 (10oz.) bags marshmallows
2/3 cup hot chocolate mix (4 packets)
6 cups Rice Krispies Cereal
1 cup mini marshmallows
Instructions
Prepare an 8 x 8 inch or 13 x 9 inch baking pan with shortening; set aside. In a large saucepan melt butter over low heat with the vanilla. Once completely melted add in marshmallows and stir until completely softened. Stir in dry hot chocolate mix until combined. Remove saucepan from heat and stir in Rice Krispies cereal. Add in 3/4 cup of the mini marshmallows and stir until evenly distributed. Pour Rice Krispies mixture into your prepared pan and level out with a greased spatula. Sprinkle the rest of the mini marshmallows over top of the Rice Krispies treats and press down lightly. Let cool for approximately 30 minutes. Cut and enjoy!
