Hello this is Melanie and Courtney from Fry Sauce and Grits! We’re so excited and grateful to be guest posting today on Just Us Four today! Shannah is a creative goddess, so this is pretty much a big deal for us.
My sister Melanie and I grew up being really close together. We found ourselves living really far part (1700 miles to be exact) after getting married, finishing school, and following our husbands careers. It was really difficult to stay in touch with each other. Skyping wasn’t cutting it for us especially with our really busy: working, being homemakers, wives, and being a mother! We both felt like we needed a creative outlet to keep ourselves sane! So in May of this year we started our blog called Fry Sauce and Grits to represent how we live in two very different places (Utah and Alabama) and stay connected through our blog! We’ve been having a blast inspiring others to create and learn while sharing our passions for beauty, diy, home decor, food, fashion, and crafting. I don’t know about you but I sometimes get in a lunch rut. My husband has been feeling the brunt of this rut (so sorry honey). I LOVE peanut butter and jelly sandwiches but when you make them almost everyday you tend to go a little cray cray. I’ve been trying my best to eat better and to be healthy this year, it’s been my New Year’s Resolution. So far I’ve been able to lose 35 pounds after having a baby last year (click here to see how I did it). It wasn’t easy, it was a lot of work, took a lot of self control when it came to eating right types of food and in the correct portions, but I can give credit to losing that weight to eating healthy foods like this
Quinoa Salad with Sesame Lime Dressing recipe! This salad is
satisfying, delicious, healthy, and filling at the same time. This is my to-go salad for pot lucks and for lunch because it packs and refrigerates well, and is super easy to make!
Quinoa Salad with Sesame Lime Dressing (Makes 4 servings)
Boil 1 cup Quinoa until done (follow directions on package) Rinse well after boiling.
1/2 cup chopped green onions
1/2 cup sliced cherry tomatoes
1/2 cup feta cheese
1 medium cucumber peeled and chopped
1/2 cup chopped almonds
1/2 cup chopped fresh cilantro
1/2 cup raisins
2 Tbsp Sesame Oil
Juice from 2 limes
Salt and pepper to taste
Directions: Combine all ingredients except sesame oil and lime juice. Mix 2 Tbsp Sesame Oil with lime juice, toss into salad. Salt and pepper to taste. Serve chilled.
Nutrition per serving: 324 Calories, Carbs 46 grams, Fat 12g, Protein 11g

Me too! Quinoa is one of my absolute favorite grains and I love using it in salads instead of rice.

Haha…my family can be pretty picky too. I love quinoa though so I am constantly trying to integrate it into our diets a little more and get them turned onto it too.
