Let’s play a little game. I’ll say {type} a word and you tell me the first thing that comes to your mind when you read it. Ready? Ok, the word is Fall. I’m guessing the results were mixed between pumpkin, squash and apple. Now, if I say apple, what do you think of? Hopefully a few of you said cobbler because today’s fall recipe is for individual apple cobblers.
Now, the intention of these is for everyone at your dinner table to have a cobbler of their own. But, I won’t tell anyone if you make them for yourself and just eat one per day. They are that good so I totally understand!
What You’ll Need:
For the filling:
2 large apples or 3 small apples (any variety, though I like fuji or honeycrisp for this recipe), cored, peeled, and sliced thinly
1/2 tsp cinnamon
1/2 tsp lemon juice
1 TBS + 1 tsp flour
3 TBS brown sugar
For the topping:
1/4 cup flour
1/4 cup sugar
1/4 tsp baking powder
1/8 tsp nutmeg
1/8 tsp cinnamon
1/8 tsp salt
1 medium egg, beaten and then half reserved (you will only use 1/2 of the beaten egg for this recipe)
1/4 cup butter, melted
Let’s Make It:
1. Preheat oven to 375 degrees F. Grease 4 small ramekins, and then spread the apples on the bottom of the ramekins evenly.
2. In a small bowl mix all the ingredients listed under ‘filling’ with a fork. Sprinkle evenly over the apples.
3. In a medium bowl mix (ingredients from topping list) flour, sugar, baking powder, nutmeg, cinnamon, and salt. Stir in the egg (make sure you only use half of the egg) until it resembles a course crumble.
4. Sprinkle the crumbles evenly over the apples. Drizzle the melted butter evenly over the top.
5. Bake for 20-25 minutes or until the topping is browned.
Serve with a dollop of ice cream or whipped cream and enjoy!

Excellent recipe, so fast and easy to make. The filling is not overly sweet and the topping is killer. When I have extra apples this will be my go to for a special treat. Thanks for sharing.
