I am so excited to continue my work with Success® Rice by sharing this recipe with you that has become a family favorite of ours. As always, while I was compensated for this post, all opinions and thoughts are my own.
We are big Tex-Mex and Mexican food fans. From burritos to quesadillas, we love the flavors of lime, cilantro combined with a hint of spice. One of my favorite things to get when we go places like Chipotle is a rice bowl. I was at home one evening and really craving one so I decided to make my own version. This margarita chicken rice bowl is so easy to make and ridiculously delicious too. You may never go to Chipotle again because you’ve got something even better that you make at home!
The great thing about a rice bowl like this is that you have complete control over what goes in it! If someone doesn’t want onions, they get to skip it when they put theirs together. I just made all the components and let my family go down the line adding what they wanted. The base, of course, was a delicious cilantro lime rice that I made using Success® Rice Whole Grain Brown Rice. I love it because it is boil in bag which means I don’t have to really do anything to it once it goes in the pot so I can focus on all the other parts of the dinner.
What You’ll Need:
– 1/4 cup tequila
– 1/4 cup lime juice
7 Tbsp chopped cilantro, divided
– 2 Tbsp avocado oil
– 2 Tbsp orange juice
– 1 serrano pepper, minced
– 1 lb chicken breast
– 1 bag Success® Rice Whole grain Brown Rice
– 1 lime
Optional Toppings:
black beans, rinsed and drained
corn kernels
bell pepper, cut into small strips
red onion, diced
sour cream
shredded cheese
salsa
guacamole
Let’s Make It:
1) In a large bowl, combine tequila, lime juice, cilantro, oil, orange juice and pepper. Add chicken and cover. Marinate in the refrigerator for at least 2 hours.
2) Heat grill over medium heat and lightly oil grates. Remove chicken from bowl and discard marinade. Add chicken and cook for 10-12 minutes or until cooked through. Remove from heat and let sit for 5 minutes. Slice into thin slices or into chunks.
3) Meanwhile, prepare the Success® Rice according to the package directions. Once done, combine with remaining 4 Tbsp of chopped cilantro and the zest and juice of one lime.
4) Arrange any toppings you plan to offer in small bowls. Place rice on serving plates and let everyone build their favorite rice bowl.
One of the wonderful things about using the boil in bag rice is that you don’t have to time everything perfectly. The rice can sit for up to 30 minutes in hot water {with the heat off} and still be perfect when you are ready to serve it! Plus, the Whole Grain Brown Rice version is 100% whole grain and gluten free which makes it a great option for us when we have gluten free eaters visiting.
