A great dip is always a perfect party appetizer. This olive feta salsa is an interesting dip that is sure to be a party pleaser. It is also a perfect make ahead appetizer.
I love parties. Whether I am throwing a big party, hosting a small backyard get together, or attending an event that someone else is hosting, I always look forward to them. Of course, every party needs tasty food and a good dip is perfect for just about any type of event. For your next event (or just when you are craving a different type of snack), you HAVE to try this Mediterranean feta salsa.
Now, I call this a salsa but you could easily call it is a Mediterranean feta dip too…or olive feta dip…maybe even olive feta tapenade. Whatever you decide to label it, I am positive you will call it delicious. It is a great combination of feta, sun dried tomatoes and other delicious Mediterranean flavors.
Mediterranean Feta Salsa Ingredients:
1 1/2 cup crumbled feta cheese
1/2 cup sun dried tomatoes, drained and julienned
1/2 cup black olives, roughly chopped
1 Tbsp olive oil
1 Tbsp white wine vinegar
2 Tbsp fresh parsley, chopped
1 Tbsp fresh oregano, chopped
2 green onions, chopped
Let’s Make It:
1. In a small bowl, whisk together olive oil and white wine vinegar. Stir in fresh herbs. Let sit for 5 minutes.
2. In a large bowl, stir together feta, sun dried tomatoes, olives and green onions. Pour in olive oil mixture and stir to combine. Refrigerate until ready to eat.
I love the freshness of the herbs blended with the cheese and olives. All together, this is a perfect appetizer to serve with everything or olive oil and black pepper crackers, chips or bread slices. I usually offer a combination of all three so everyone can choose their favorite.
This combination may seem a little “out there” because it really consists of a bunch of things that usually served on their on as part of an antipasto platter but combining them makes something truly delicious.
You can easily make this a day or two ahead which is great for parties and other events. I love finding yummy make ahead appetizers that I know will be a hit.

What a delicious dip! I love the herbs and feta combo and all that bright, fresh flavor! Definitely great for a picnic or BBQ – and I’m guessing leftovers would be delicious on top of a sandwich or in a wrap 🙂

How many people would this serve as an appetizer. I’m having a party of 8. I’m trying to decide if I need to double the recipe.

This would be fine for a party of 8 if you are also have other things to much on. If it is the main appetizer, I would recommend doubling it.
