My kids are not breakfast eaters. Or any meal really. They are snackers and getting them to really sit down for an actual meal can be difficult. I try to get them interested with foods that seem like snacks but are actually going to fill them up. One morning I made mini chocolate waffle and fruit bites and they were a hit. They’ve become a favorite breakfast item and we make them at snack time too.
My waffle bites have a secret ingredient to them which adds 7 essential vitamins and minerals and 8 grams of protein per serving. Nestlé® Nesquik® has always been a favorite in our house for delicious drinks. We keep a 10 pack of the 8oz bottles of ready to drink chocolate NESTLÉ® Nesquik® at the house all the time. I grabbed one and used it in my mini chocolate waffle and fruit bites in place of some of the buttermilk to add a little bonus nutrition to the recipe.
Ingredients for Mini Chocolate Waffle and Fruit Bites:
1 1/2 cups all purpose flour
3 Tbsp sugar
1/2 cup cocoa powder
1 tsp baking powder
1 tsp salt
1/2 tsp baking soda
3 eggs
4 Tbsp butter, melted and cooled
8 ounces buttermilk
8 ounces NESTLÉ® Nesquik® chocolate milk
Let’s Make It:
1) Preheat waffle iron according to instructions.
2) In a medium bowl, combine flour through baking soda.
3) In a separate bowl, combine eggs, butter, buttermilk and NESTLÉ® Nesquik® chocolate milk. Stir into dry ingredients and mix until just combined.
4) Spray waffle iron with nonstick cooking spray. Pour 1/4 – 1/2 cups of batter into waffle iron {depends on your waffle iron} and cook for 3-5 minutes or until waffles are lightly browned and crisp around the edges.
5) Let cool slightly and cut into small pieces. Top with sliced banana and raspberries before serving.
My kids devoured these waffle bites and were asking for them again once they got home from school. I have a feeling my waffle maker will be getting a work out now that they have fallen in love with these. I don’t mind because they are actually eating breakfast!
While I originally made these for my kids as a nourishing meal option, I am thinking they would be perfect for brunch too! The adults would totally love them.
