It is no secret around here that I get up early and go hard all day long. By bedtime, I am exhausted and really only make it through the day thanks to some major caffeine. Of course, picking good foods to fuel my day is important too and that starts with breakfast.
No one in my family really has time for a sit down breakfast so we tend to turn to cereal or muffins to get our day started. Recently, we had the opportunity to try Honey Bunches of Oats Morning Energy cereal in both Cinnamon Crunch and Chocolatey Almond Crunch.
As always, everyone in our family differed on which flavor tasted the best. Personally, I think the Chocolatey Almond Crunch one was the best because I just can’t resist chocolate. My daughter preferred the chocolate flavor as well. My husband, the non-chocolate fan in the house, preferred the Cinnamon Crunch flavor though. He is a big cinnamon fan {think cinnamon scones, cinnamon rolls, etc} so that makes perfect sense.
The biggest perk to these cereals is all of the whole grains and fiber that they contain which makes them perfect for keeping your energy level up through out the morning.

In fact, I was so in love with the Chocolatey Almond Crunch Honey Bunches of Oats Morning Energy cereal that I decided to make some cereal muffins using it too so I could enjoy the cereal on the go. {Let’s face it…I am pretty much always on the go anyways}
What You’ll Need:
2 eggs
1/2 cup grapeseed oil
1 cup milk
1/3 cup honey
2 cups flour
1/2 cup brown sugar
1 Tbsp baking powder
2 tsp salt
3 cups Honey Bunches of Oats Morning Energy cereal
Let’s Make It:
1) Preheat oven to 350 degrees. Spray muffin pan with nonstick cooking spray.
2) In a large mixing bowl, combine eggs, oil, milk and honey.
3) In a medium bowl, combine flour, brown sugar, baking powder and salt. Stir to combine.
4) Mix dry ingredients into the wet ingredients in batches until well mixed. Stir in cereal.
5) Spoon batter into each of 12 muffin cups. Bake at 350 degrees for 15 minutes or until golden brown. Let cool before eating.
