It is grilling season! Once the weather turns just the slightest bit warm, we break out the grill and it doesn’t get put away until the snow starts to fall. Grilled chicken kabobs are one of our favorite dinners and this mustard balsamic verion wins top billing on our summer menu.
The first, and most important, part of this recipe is the chicken kabob marinade. This one is made from a combination of mustard, balsamic vinegar, lemon juice and a few other delicious ingredients. It is completely paleo and Whole30 friendly too.
The marinade works great as a salad dressing too so be sure and double it to have some for later.
These kabobs are 100% paleo and taste amazing. Despite being dino chow {our affectionate term for paleo foods}, my family loves these and always wants me to make them. They are the perfect food for the grill and easily customizable.
I usually set up a little kabob making station and let everyone choose what they want on their skewers before they hit the grill. The kids also love to toss a few hot dogs on the grill so we keep those on hand too.
If you don’t feel like grilling, you can easily make this chicken kabob recipe in the oven. Just switch on the broiler for 2-4 minutes at the end to give it a little char like the grill would.

Mustard Balsamic Chicken Kabob Recipe
Make the ultimate chicken kabobs with this amazing recipe featuring a tangy mustard balsamic chicken kabob marinade.
Ingredients
Chicken Kabob Marinade
- 4 Tbsp Heinz yellow mustard
- 4 Tbsp Balsamic vinegar
- 6 Tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp paprika
- 3 tsp fresh rosemary, finely chopped
Chicken Kabobs
- 1 red onion, cut into wedges
- 2 lbs chicken breast, cut into 1 inch pieces
- 1 green pepper, cut into wedges
- 8-10 large mushrooms, cleaned
- 8-10 small white potatoes
Instructions
- In a small bowl, whisk together yellow mustard, Balsamic vinegar, lemon juice, garlic, paprika and rosemary. Reserve 1/2 of marinade.
- Add chicken to 1/2 of the marinade and marinate in the refrigerator for at least 30 minutes.
- Heat grill to medium heat. Oil grates lightly.
- Remove chicken from the refrigerator and build your kabobs. I use a mix of the various ingredients. Grill 5-7 minutes on each side, basting with reserved marinade before turning, or until chicken is fully cooked. Serve with remaining reserved marinade on the side.
