We are spending more and more of our holidays at home with family. With a large-ish house and two kids, it seems to work out really well for everyone to come and hang at our house for major holidays. We have space for everyone to stay and the kids can stay comfy in their own environment. Knowing I have extra mouths to feed in the mornings always has me searching for breakfast ideas that are quick and easy. Wanting something delicious but that required very little work of a morning led me to make this pumpkin pie french toast casserole recipe.

Starting in September, pumpkins explode on the scene. There is pumpkin food {examples here and here} and tons of pumpkin crafts. I don’t think any other item says fall quite like a pumpkin…well, except maybe a leaf. BUT, pumpkins are way more fun to craft with. You can spend hours looking around the web at different ways to decorate a pumpkin, make something into a pumpkin or sew a pumpkin. I’ve spent all that time searching for you though and gathered 25 amazing pumpkin crafts.

Pumpkin Iced Ginger Snaps
Bake sales are my weakness. I love going to bake sales and seeing all the delicious things people have made. Being on the baking side of the bake sale though, definitely my weakness in a whole ‘nother way. So, I set out to create a bake sale worthy item that even a non-baker could throw together and make it a best seller. My quest led me to Pumpkin Iced Ginger Snaps.
These cookies use a store bought ginger snap base {because hey…we’re non-bakers here} but look just as homemade and delicious as any other treat made from scratch. Their store bought origins will be our secret.

Pumpkin Snickerdoodle Sandwich Cookies
Very few food items say fall like pumpkin, cinnamon and nutmeg. Combine them all together and you have fall in a dish…or in this case on a cookie sheet. I make some pumpkin cream cheese frosting and used it to make pumpkin snickerdoodle sandwich cookies. So, grab some apple cider and let’s start enjoying these delicious cookies.

Chalkboard Paint Pumpkins
Artificial pumpkins are one of those craft items that you can do so many things with…carve, cover, paint, etc. The list really does go and on. Last year, I used some washi tape to decorate one for part of my Halloween decorations. This year, I decided to create some chalkboard paint pumpkins so my kids could decorate them over and over again between now and Halloween.

Pumpkin Muffins with Cream Cheese Glaze
I just can’t get enough of pumpkin this time of year. One of my favorites things are the pumpkin muffins from Panera. They come with this delicious powdered sugar dusting on top that makes them taste so delicious. I decided to try and make my own version of pumpkin muffins at home and added a cream cheese glaze to mine over the Panera powdered sugar. They turned out wonderfully so I will definitely be making them again!

Pumpkin Soup with Cinnamon Marshmallows and Pepitas
This post was originally a guest post over at The CSI Project as part of Dee’s fall food challenge. I wanted to share it with you here on Just Us Four though in case you missed it.
Nothing says fall quite like pumpkins. They are the quintessential fall icon. What’s the best food for fall…why something including pumpkin of course!
Today, I’m going to share with you pumpkin soup with cinnamon marshmallows. It’s the perfect way to warm up on a cool, fall night!
Pumpkin Soup with Cinnamon Marshmallows
Adapted from epicurious.com
What you’ll need:
3 Tsbp unsalted butter
1 medium yellow onion, diced
4 cloves garlic, minced
1 tsp grated fresh ginger
1 leek {white and pale green parts only, diced}
1 tsp ground cloves
1/2 tsp cinnamon
1/4 tsp ground allspice
1/2 tsp ground black pepper
3 15 oz cans pumpkin
6 cups vegetable broth
1 tsp freshly ground nutmeg
1/2 cup mini marshmallows
1/4 tsp ground cinnamon
1/2 cup pepitas (pumpkin seeds)
Let’s make it:
1) Wash and dice your leeks.
I typically cut mine and then place them in a bowl of water for 10 minutes to let all the dirt soak off. Just gently scoop them out to keep from stirring up the dirt that has settled to the bottom.
2) In a dutch oven, melt butter over medium heat. Add onion, garlic, ginger and leeks. Cook over medium heat for 5 minutes.
3) Add the canned pumpkin, cloves, cinnamon, allspice, black pepper and vegetable broth. Bring to a boil.
4) Reduce heat to low and let soup simmer for about 25 minutes or until the vegetables are tender.
5) While the soup cooks, place the marshmallows and 1/4 tsp cinnamon in a resealable bag. Shake to coat.
6) Serve soup topped with sprinkle of nutmeg and marshmallow/pepita mixture.

Decorating Pumpkins
Whew! I am so glad last week is over! I had walking pneumonia and, honestly, felt like I was going to die. After several days on the couch doing very little, I am finally starting to feel a little better.
During the end of my illness, I did manage decorating pumpkins for the house using washi tape and fabric.
I started with an orange foam pumpking and some black and white chevron washi tape.
I just used the washi tape to create vertical “stripes” on the pumpkin. I brushed some mod podge over top of the tape to keep it from coming up as the month went along.
