These Paleo Southwestern Waffles are to die for, they’re super simple to make and loaded with amazing flavors! What could be better than waffles that can be enjoyed without any worries? Paleo Southwestern Waffles will be your new favorite breakfast!
I’m in love with a waffle maker. Is that weird? I certainly hope not because I’m not willing to break up with it anytime soon. Ever since I made my paleo lemon poppyseed waffles, I can’t stop making waffles. This time I am going savory though with my newest obsession: Paleo Southwestern Waffles.
Now, the term waffle might be a little misleading for these but they are made in the waffle iron so let’s just go with it. Whatever you choose to call them, I guarantee you will make them over and over again because they are so darn good.
Ingredients for Paleo Southwestern Waffles:
2 sweet potatoes, peeled and shredded
3 green onions, chopped
1/2 bell pepper, diced
6 slices bacon, cooked and crumbled
3 eggs, lightly beaten
2 tsp chili powder
3 tsp cumin
1 tsp garlic powder
salt and pepper
Let’s Make It:
1) Heat waffle iron to next to highest setting. {That is a #4 on mine}. If your waffle iron requires it, brush with melted coconut oil or ghee once heated.
2) In a large bowl, combine sweet potatoes, green onions, bell pepper, bacon, eggs and spices. Stir well to mix.
3) Fill waffle iron with about 1/4 of the sweet potato mixture. Close lid and cook for 2-3 waffle cycles until crisp on the outside. Repeat with remaining mixture.
On my busy days, I top these with homemade paleo sour cream and extra chopped green onions. If I have a little extra time, I like to serve these with poached eggs on top. The egg yolk adds the perfect amount of creaminess to them.
