So, I have never needed a good paleo meal more than I do today! This weekend we celebrated one of my closest friend’s birthdays and it was filled with delicious food {ramen!}, drinks {wine and sake} and ended with a late night trip to Taco Bell. Tonight, we’re getting back on track with some paleo turkey stir fry as a way for repenting for my delicious but not so great food choices.
We eat chicken so much that I like to change it up from time to time and throw in a different protein. Turkey cutlets are perfect for this! You can definitely change up the vegetables in this…I just tend to use whatever I have on hand. It is perfect for fridge cleaning day!
Paleo Turkey Stir Fry Ingredients:
2 Tbsp coconut oil
1 Tbsp grated fresh ginger
2 Tbsp curry powder
2 sweet potatoes, peeled and cut into 1-inch chunks
2 turkey cutlets, cut into strips
2 cups cauliflower florets
1 cup snap peas
1 Tbsp lime juice
2 Tbsp chopped cilantro
Let’s Make It:
1. Heat oil over medium heat. Sauté ginger and curry powder for 30 seconds. Add sweet potatoes and cook, stirring frequently, for 7-10 minutes.
2. Season turkey strips with salt and pepper and then add to pan. Cook for 3-5 minutes. Add cauliflower and cook for an additional 5-7 minutes or until turkey is done. Season with salt and pepper. Remove from heat and stir in lime juice. Serve topped with cilantro.
I serve this with cauliflower rice but I also eat it on its own too. The flavor is delicious and it makes the perfect week night meal since it cooks super quickly.
