A Raspberry Italian Mojito has the perfect amount of sweetness, mint, and fizz to be one refreshing drink! Made with all fresh ingredients and super easy to make! This raspberry mojito is perfect for spring or summer time, it will become your new favorite go-to cocktail!
The weather is really starting to warm up here and we are enjoying more and more time out on the deck. More time outside usually means more yummy cocktails being mixed in our house!
One of our local restaurants makes an Italian mojito and it is my favorite. At home, I decided to try my own and concocted this Raspberry Italian mojito.
This drink gets the perfect amount of fizz thanks to prosecco. It is the perfect combination of fresh fruit, mint and fizz. Multiply the recipe and make a pitcher or make it by the glass when you want a yummy cocktail on a warm, summer night.
Raspberry Italian Mojito Ingredients:
1 6oz package raspberries
8 mint leaves
2 oz lime juice
3 tsp sugar or agave
1 1/2 oz white rum
2 oz prosecco
Ice
Sugar cane
Let’s Make It:
1) Set aside 2-3 raspberries and 2 mint leaves.
2) In a cocktail shaker, muddle together the remaining raspberries, mint, sugar and lime juice. Strain liquid in glass.
3) Stir in sugar and rum until sugar dissolves. Top with prosecco and add ice. Add remaining raspberries and mint. Garnish with sugar cane.
**Want to make this a mocktail? Substitute 1 oz club soda and 2 oz of sparking grape juice for the rum and prosecco.**
I don’t think we will totally toss wine slushies by the wayside this summer but I definitely think this Raspberry Italian mojito will get heavy rotation in our summer cocktail list.
