I love July 4th! Not only because I love our country but also because of all the fun events, decor and food that incorporates our national colors of red, white and blue. This red, white and blue no bake cheesecake recipe came about as I was racking my brain trying to decide what to make for Memorial Day {same colors and all}. I didn’t end up making it for that BBQ but got to playing around with the recipe later the next week with July 4th firmly planted in my head as inspiration.
The best part about these mini cheesecakes is that they are no bake. In the middle of the summer, the last thing I ever want to think about doing is turning on my oven. I’d much rather stand in front of the cool refrigerator taking longer than needed to put something in their to stay cool. Mathlete reads here more than usual these days trying to earn some brownie points so we won’t talk about exactly how many times the warning alarm went off on the fridge before I finally closed it.
- 2 cups graham cracker crumbs
- 1/4 cup butter melted
- 16 oz cream cheese softened
- 3/4 cup sugar
- 1 Tbsp cherry juice
- 2 cups cool whip
- red food coloring {optional}
- blueberries
- whipped cream

Line a muffin tin with paper liners.

In a medium bowl, combine the graham cracker crumbs and melted butter. Stir well to combine. Divide crumb mixture between 12 prepared cups and press down to form crust.

Beat together cream cheese and sugar until smooth. Add in cherry juice and mix well. If a brighter red color is desired, add drops of red food coloring. Fold in cool whip.

Divide mixture between between muffin cups and refrigerate for at least 4 hours. Top with whipped cream and blueberries before serving.
That recipe is so easy that I think I could even turn H loose with it and they would turn out perfectly. Just be sure to keep these guys cold until you are ready to serve them so you won’t need to break out the forks because they get too soft. Of course, if that happens, they will still taste amazing but you’ll just need a few more napkins and maybe some flatware handy to eat them.
Of course you can make these even cuter with some striped or patriotic cupcake liners. They are really easy to find in red, white and blue right now since we are so close to the holiday.
