Reuben pizza is the perfect combination of your favorite sandwich and a perfect pizza. We love it for St. Patrick’s Day or if you are just craving a yummy combination of corned beef and the tasty dressing.
We eat pizza a lot in our house. It is a favorite of the littles {of course} and my husband doesn’t mind much either. We’ll do make your own pizza nights to add to the fun. On a recent “make your own” night, I came up with the idea to turn one of my husband’s favorite sandwiches into a pizza and created this reuben pizza recipe.
This pizza is pretty simple to make but it is huge on flavor. You just pile the pizza crust with the your favorite Reuben sandwich ingredients.
We use naan or flatbread usually. However, if you prefer a homemade pizza crust, just grab your favorite recipe and start there.
There are lots of discussions of whether you should use Thousand Island dressing or Russian dressing. The majority vote went to Thousand Island but don’t let that stop you from slathering it with Russian dressing.

Reuben Pizza Recipe
You have to try this Reuben pizza. It has all the amazing flavors of a Reuben sandwich but all on a chewy pizza crust.
Ingredients
- Pizza Crust
- 1/2 cup Thousand Island Dressing
- 2-3 slices of corned beef
- 1 cup of Swiss or Gruyere cheese, shredded
- Sauerkraut {optional}
- Let's Make It:
- 1) Prepare your crust. If you are using fresh dough, roll it out to your desired size.
- 2) Spread the thousand island dressing on top of the crust.
- 3) Add a thin layer of shredded cheese.
- 4) Add pieces of corned beef {and sauerkraut if using}. Top with more cheese.
- 5) Bake in 425 degree oven for 8-10 minutes or until cheese is melted.
Instructions
- Preheat oven to 425 degrees.
- Prepare your pizza crust by putting it on a rimmed baking sheet. If you are using a fresh dough, roll it out to your desired size prior to putting on baking pan.
- Spread the Thousand Island dressing on top of the pizza crust.
- Add a thin layer of shredded cheese.
- Top with corned beef and sauerkraut. Add additional cheese.
- Bake for 8-10 minutes or until cheese is melted and slightly browned.

Question: Can I use something else other than the shredded cheese? I once tried cheese blocks with pizza. Do you think they will go with this recipe?
