Make your St. Patrick’s Day a little more delicious with these easy Reuben Sliders! Perfect for a crowd or just a few people. Plus a must with green beer!
In honor of St. Patrick’s Day tomorrow, today’s Throwback Thursday post is all about Reuben sliders. I first made these sliders for Mathlete a few years ago since I know he really loves a Reuben sandwich.
I’ll be honest and tell you that I am not a huge Reuben fan so I had to do a little research when I decided to make it at home. Of course, you have to have tons of Thousand Island dressing, sauerkraut, and melted cheese. But, typically, in restaurants, you will find Reuben sandwiches on rye bread.
Since these were sliders, I couldn’t find any rye bread so I had to improvise. I also had Mathlete weigh in on whether he preferred corned beef or pastrami. When you make them, feel free to choose your favorite meat!
This rueben sliders recipe are absolutely perfect for a St. Patrick’s Day party or just as an easy, fun dinner option. We make these, along with Reuben pizzas, all the time and everyone who tries them loves them! For the kids, I will often just leave off the sauerkraut (although my 6 year old likes it) and they devour the sliders too. Definitely a great option for the whole family.

Essential items for this recipe:
- Baking sheet
- Foil
- 1 pack Slider Buns
- 3/4 lb Corned Beef shaved or thinly sliced
- 1/2 cup Thousand Island Dressing
- 8 slices Swiss Cheese
- 1/2 cup Sauerkraut
- 2 tbsp Melted Butter

Preheat oven to 350 degrees. Line a baking sheet with foil.

Spread half of Thousand Island dressing on bottom of slider buns. Place on prepared baking sheet.

Top each with a 1/2 a slice of Swiss cheese, corned beef, sauerkraut, and the other 1/2 slice of Swiss cheese. Spread remaining Thousand Island dressing on the other part of the slider buns. Place on top of sandwich.

Pour melted butter over sliders. Cover with foil. Bake for 15-20 minutes in preheated oven.
