I love the idea of Sunday dinners. Growing up, we would go to my grandma’s house for Sunday dinner and she would spend practically all day getting ready for it. These days, with our crazy busy schedule, a traditional Sunday dinner doesn’t happen very often because we are just too busy. So, we try to squeeze in our family dinners when we can and make recipes that make any day taste like Sunday. Rosemary balsamic pork chops paired with creamy mashed potatoes definitely makes a family dinner feel extra special but without a ton of work.
With fall here, I am putting apples with just about everything and they make the perfect finishing touch for these rosemary balsamic pork chops too. I use Idahoan Signature Russets for the mashed potatoes because they only take about 5 minutes to make but have a nice smooth taste like homemade mashed potatoes. The hint of butter and cream is perfection. They pair perfectly with the rosemary balsamic pork chops and can easily be made while the pork chops bake.
Ingredients for Rosemary Balsamic Pork Chops:
4 boneless, skinless pork chops
2 Tbsp olive oil
3 Tbsp wholegrain mustard
1/4 cup balsamic vinegar
1 Tbsp fresh rosemary, chopped
1/2 medium onion, sliced
1 Granny Smith apple, sliced
Salt and pepper to taste
Let’s Make It:
Preheat oven to 400 degrees.
1. In a small bowl, whisk together oil, mustard, vinegar and rosemary. Reserve 2 Tbsp of mixture.
2. Place pork chops into baking dish. Season with salt and pepper. Pour remaining mustard mixture over pork chops and turn to coat.
3. Bake in preheated oven for 20 minutes. While the pork chops are baking, toss the onion and apple slices in the reserved 2 Tbsps of mustard mixture. After 20 minutes of baking, add onion and apple sliced to pork chops in the oven and bake for an additional 10 minutes.
Note: If your pork chops are extra thick, you may need to bake them longer.
I love how easy this meal is to make. Once the pork chops are in the oven, you only need about 5 minutes to finish the perfect side dish for them: Idahoan Signature Russets mashed potatoes. They make getting a Sunday style dinner on the table in 30 minutes a snap.
