About a year ago, my friend Liz introduced to me Rumchata. Have you ever tried it? If you haven’t, run to the store right now and get some. And, nope, this is totally NOT sponsored. I am just a huge fan. My favorite way to drink it: a rumchata iced coffee cocktail.
Rumchata is a cream based liqueur that has rum and flavors of cinnamon and vanilla. If you have ever had Horchata, Mexican rice milk, it tastes a lot like that but with rum added. I know lots of people who drink it over ice but my favorite way is to mix it with iced coffee. For a little extra cinnamon flavor, you can add Fireball whiskey. Either way, it makes the perfect late night party drink or even a great evening cocktail to sip on. My husband likes his in an insulated cup during the winter though because the glass gets a little cold with the ice 😉
Ingredients for Rumchata Iced Coffee Cocktail:
4 oz lightly sweetened iced coffee (I usually get Stok Not Too Sweet)
2 oz Rumchata
1 oz Fireball whiskey (optional)
Ice (see note)
Let’s Make It:
1. Fill a highball or similar glass 3/4 full with ice. Add iced coffee, Rumchata and Fireball (if using). Stir to combine.
When I am making this by the pitcher for a party, I will make my ice cubes out of the iced coffee that I purchased which is great because I don’t have to worry about the drink getting watered down. Definitely give that version a try when you are making this rumchata iced coffee cocktail at home!
For an extra fun touch, I sometimes add whipped cream and little cinnamon sprinkle. It is totally unnecessary but makes for a gorgeous cocktail!

I usually make iced coffee ice cubes and use in this but regular ice works fine too.
