About two weeks ago, my daughter and I both had the flu. We were those that thought we didn’t need a flu shot back in the late fall but boy were we wrong. A week of recovery and she is all better. Me…I have pneumonia. For those of you with busy households, you know that when mom goes down, most of the daily happenings in the house really start to suffer. Most notably in our house is family dinner. Mathlete isn’t much of a cook and I usually take on making sure dinner is ready through meal planning and doing all the shopping. When my doctor prescribed 5 medications (yep, 5!) and most of which carry warnings of “causes extreme drowsiness” or “may cause dizziness”, we knew we needed a plan to save our family dinner.
I knew I needed an option that created simple meals with easy to understand directions. Enter Terra’s Kitchen. Terra’s Kitchen is a farm-to-front door delivery service that provides fresh, seasonal ingredients that are pre-portioned and prepped. Each meal can be made in 30 minutes or less which is already about 20 minutes more than Mathlete really wants to spend in the kitchen but will still do. Plus, there is no shopping to be done because everything you need, except a few pantry staples like oil, is in the box and ready to go. They even do the chopping for you!
The delivery comes in what can only be described as a portable refrigerator…complete with shelves and a little door. You unpack your delivery, peel off the shipping sticker and put it right back outside for pick up the next day. The little “fridge” gets reused over and over cutting down on waste while still making sure the food in the delivery stays fresh.
Our delivery came with some delicious items like a Southwestern Steak and Sweet Potato Bowl and Pan seared chicken with crisp haricots verts in the most amazing sweet and sour bacon sauce. Mathlete heard bacon and he was sold.
Two pans and less than 30 minutes later and we had a delicious dinner that was full of flavor and didn’t have us dialing up the local take out place.
Also in the box were a veggie kale Caesar salad and a chopped green salad. That was my lunch for two days while I was sick in bed. No cooking required which made it perfect!
