I am always looking for new products to use when my gluten free or vegetarian friends and family visit for meals. I am excited to share my newest find, that I used in our favorite recipe for sloppy joe casserole, with you today. With fall and back to school fast approaching, I am starting to build a great list of go to recipes that easy to make and taste great too. My sister in law was visit recently and she is vegetarian. I thought she might be joining us for dinner one night so I did a little research on what I could make that my family of meat eaters would love and she could enjoy too. That was when I was introduced to #BeyondMeat. BeyondMeat is a meat substitute that takes all of the familiar things in meat {amino acids, fats, trace carbohydrates, minerals and lots of water} from plants and applies heating, cooling and pressure so that the result is just like meat. I used the BeyondMeat to make a delicious sloppy joe casserole and everyone LOVED it.
Since we are total meat eaters, the world of meat substitutes was totally foreign to me. I found out from sources like The Today Show and the NY Times that BeyondMeat was completely soy free and was made with 100% Non-GMO pea protein. The beef crumbles are also gluten free and Kosher but offer the same amount of protein as ground beef. I found mine at my local Whole Foods store in the frozen section using the store locator.
Cooking with the beef crumbles was really simple. I added them to my sloppy joe casserole in place of beef with no problems at all.
- 1 package Beyond Meat beef crumbles
- 2 tsp oil
- 1 onion, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 3 cloves garlic, minced
- 1 Tbsp red wine vinegar
- 1 Tbsp Worcestershire sauce
- 2 cups tomato sauce
- 2 Tbsp tomato paste
- 1 cup shredded cheese
- 1 can biscuits
- Preheat oven to 375. Spray a 2 quart casserole dish with nonstick cooking spray.
- In a large pan, heat oil over medium heat. Add onion, bell pepper, zucchini and garlic and saute for 3-5 minutes or until softened. Add beef crumbles and cook, stirring occasionally, another 5-7 minutes.
- Stir in tomato sauce, tomato paste and Worcestershire sauce. Cook for 5 minutes. Remove from heat and stir in red wine vinegar. Stir in shredded cheese. Pour into prepared baking dish and top with biscuits.
- Bake in oven for 10-15 minutes or until biscuits are lightly browned.
- You can use 1 lb ground beef in place of Beyond Meat beef crumbles if desired.
The casserole was a huge hit with our family! My sister in law didn’t end up eating with us but I didn’t tell my family, at first, that it was real beef in the casserole and they didn’t even notice.

We are NOT a vegetarian family either, but I have switched to ground turkey instead of beef and no one has really noticed. I wonder if I could try this and fool them for meatless Monday 🙂
