After a day commuting out in the cold {or even watching it from the window inside my house}, I want something warm and comforting. Of course, Christmas is approaching so it isn’t like I have a ton of extra time to spend in the kitchen. That is where my recipe for Slow Cooker Beef Bacon Chili comes in.
It is definitely feeling like winter here. Our temperatures are staying in the 30s and 40s almost every day. I know the calendar says a few more days until the official start of winter but that hasn’t stopped Mother Nature from hitting us hard with wintery weather.
The great thing about using a crockpot to make dinner is that you totally get to fix it and forget it. I prep everything in the morning {or even the night before} and then turn it on before I leave work. The reward: a delicious dinner that is already done and only a few dishes to clean up.
This slow cooker beef chili recipe has a few more steps than I would traditionally do. I’m usually a throw it all in and turn the crockpot on type of person. However, I think browning the beef adds to the overall flavor of the dish so it is worth it. You could easily skip it though if you are short on time.

Essential items for this recipe:
- Large pan
- Slow cooker
- 1 tbsp Ghee
- 3 slices Bacon cut into 1-inch pieces
- 3 lbs Boneless Short Ribs cubed
- 2 cloves Garlic minced
- 1 Onion sliced
- 2 Jalapenos minced
- 1 Bell Pepper diced
- 1 tbsp Chili Powder
- 1.5 tbsp Cumin
- 2 cans Rotel Diced Tomatoes 1 drained and 1 undrained
- 1 can Dark Red Kidney Beans drained
- 3/4 cup Chicken Stock
- 1 cup Pumpkin Puree

Heat ghee in pan over medium high heat. Add bacon and cook until crisp. Remove from pan.

Add beef and cook for about 2 minutes or until browned on all sides. Transfer beef and bacon to slow cooker bowl. Top beef with onion, garlic, jalapeños and bell pepper.

Sprinkle mixture with chili powder and cumin. Add diced tomatoes, beans and chicken stock. Stir well.

Cook on low for 8-10 hours. In the last 30 minutes of cooking time, add in pumpkin puree and stir well.
