These smoked salmon toasts are the perfect option for busy weekdays or lazy Sunday mornings when you want a delicious breakfast but don’t want to put a lot of effort into making it.
Who loves sweet potato toasts? I am a huge fan but don’t love the hassle of making them from scratch. Enter Sweet PotaTOASTS from the makers of CAULIPOWER. They are the perfect base for these smoked salmon toasts and so many other delicious options too.
So, what are Sweet PotaTOASTS?
They are made from real sweet potato slices and are an excellent source of vitamin A and C, a good source of fiber and vitamin B6, and satisfies any gluten-free, vegan, or paleo dietary needs. Sweet PotaTOASTS are a clean label, single ingredient, bread replacement. You’ll find them in the freezer aisle in Original and Sea Salt & Olive Oil.
I love them because they are the perfect replacement for bread in my diet when I am trying to cut down on grains and carbs. The original flavor is perfect for topping with loads of different things, from sweet to savory.
One of my absolute favorite topping combinations mimics an everything bagel with cream cheese and lox. For these smoked salmon toasts though, we start with the Sweet PotaTOASTS that are baked in the oven for about 15 minutes. Then, top them with fresh ricotta and capers.
Then, we top that all off with some capers, slivered red onions and everything bagel season. It is a the perfect replacement for the normal Sunday morning treat of bagels with lox.
