Summer is all about grilling and what better to throw on the grill than southwest turkey burgers that get topped with a tasty Mexican corn relish!
We love getting outside during summer and cooking on the grill. Burgers are always a big hit and they are so easy to add tons of flavor to and customize for everyone’s individual taste. These southwest turkey burgers are amazing and get an extra helping of flavor thanks to a quick Mexican corn relish.
Whenever we are planning a backyard BBQ, I always make a stop at our local BJ’s Wholesale Club for ingredients. They have everything I need to make these burgers and plenty of snacks and sides to go along with them. One favorite is bacon ranch potato salad that starts with the red bliss potato salad from BJ’s Wholesale Club.

The Mexican corn relish is amazing on top of the burgers but you can use it in all kinds of recipes. It goes great as part of a southwest inspired salad too.
One of the great things about this recipe: you can make the burgers and corn relish ahead of time! Just keep the burgers cold until ready to grill and the corn relish in an airtight container in the refrigerator.

- 1 lb ground turkey
- 1/2 cup diced green chiles
- 1 tsp onion powder
- 1 tsp chili powder
- 1/2 tsp cumin
- 1 Tbsp lime juice
- Salt and pepper
- 1/2 cup shredded pepper jack cheese optional
- 1 cup cider vinegar
- 1/3 cup sugar
- 1 Tbsp mustard
- 1 tsp turmeric
- 1 Tbsp salt
- 6 ears Wellsley Farms corn cooked and cut off the cob
- 1 Wellsley Farms green pepper diced
- 1/2 red onion diced
- 1/8 tsp crushed red pepper

Combine turkey through salt/pepper. Mix well and form into patties. Heat grill to medium-high heat and cook burgers for 4-5 minutes on each side or until cooked through. Top with shredded cheese and let melt (optional). Remove from grill.

Combine cider vinegar, sugar, mustard, turmeric and salt in a saucepan. Bring to boil and boil for 3 minutes. Remove from heat and let cool. Combine corn kernels, green pepper, onion, crushed red pepper and vinegar mixture in medium bowl. Stir well. Refrigerate until ready to eat.
