Spaghetti with Peppers and Onions is a great quick weeknight dinner that requires little hands-on cooking time! And, even though is a quick dinner recipe, it will still taste just as good as mom’s spaghetti!
Spaghetti with Peppers and Onions is one of my go to meals for freezer meals AND busy weeknights. It is such an easy spaghetti recipe that, on the night I cook it, I just usually double the ingredients and put half into a container in the freezer for a later date.
One tip: I typically do all the knife work for recipes the day I bring my groceries home so it is all ready to go when I get ready to cook. This makes is super easy to make spaghetti recipes super fast.

This homemade spaghetti recipe is the perfect quick and easy dinner idea. Double the recipe and freeze half to enjoy it later without any additional prep required.
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 onion sliced
- 1 tsp garlic
- 2 tsp olive oil
- 8 oz spaghetti
- 15 oz can tomato sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 cup grated parmesan cheese

Prepare the spaghetti for 2 minutes shorter than the package directions say. Drain.

In a large saucepan, heat oil over medium heat. Add peppers and onions and saute for 5 minutes. Add garlic and saute for an additional minute.

Sprinkle basil and oregano over peppers and onions. Add tomato sauce. Simmer for 5 minutes.

Add pasta to pepper mixture and toss to combine. Cook over medium heat for another 2 minutes. Sprinkle with grated parmesan cheese.

That looks good, Shannah. I know whaat you mean about quick, work week suppers. Sometimes I use the crock pot and that’s always nice. Chicken (I like skinless thighs and a jar of goood quality salsa. 6 to 8 hours on low. Voila! Yummy. Also, sometimes I marinate a steak in fresh lime juice and olive oil (like tonight). Broil, slice and serve over salad. Some nights, peel and cut potatoes into cubes. Boil til soft. Lightly fry in oil. Add onions, peppers, mushrooms and then, a few scrambled eggs.
