It is official. Spring is here! Well, unless you count the 5 inches of snow we got yesterday. Then, it looks like Spring is farther away than ever. To make myself feel better about this ridiculous weather, I decided to dive into pastel colors head first and make spring Oreo truffles!
These truffles are seriously the easiest things to make but they are so delicious! You only need a few ingredients and you are on your way to delicious Oreo truffles. I used birthday Oreos for this batch but you could easily use any flavor/color of Oreos you wanted!
- 1 package of Oreo cookies
- 1 8 oz package of cream cheese softened
- Candy melts in desired colors
- Sprinkles {optional}

In a food processor, crush Oreo cookies.

Add cream cheese and pulse until cream cheese is blended and a soft dough forms.

Spoon rounded tablespoons of dough onto parchment lined baking sheet.

Freeze for 15 minutes.

Melt candy melts for 30 seconds. Stir. If not completely melted, microwave in 10 second intervals until completely melted.

Dip dough balls into candy melts and sit on parchment paper. Top with sprinkles if desired and let candy harden.
See, I told you they were so easy to make! I found Mathlete popping these in his mouth every time he walked by the plate they were sitting on so I guess they turned out well. I think I will try some original Oreos for my next batch.
