Tomorrow is the first day of Spring! I really wish it actually felt more like spring here but, after a February filled with 70 degree days, I guess I can’t complain too much that we have snow on the ground in March. I made these spring pastel vanilla donuts to celebrate the first of spring.
The pastel color of these donuts makes them so perfect for spring and even Easter! I used vanilla flavored milk with added protein to make them so I the kids could still enjoy them for breakfast and get some protein while eating them. And who says donuts are bad for you?!
Ingredients for Spring Pastel Vanilla Donuts:
1 cup all purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/4 cup granulated sugar
2 Tbsp unsalted butter
1 large egg
1/2 cup + 2 Tbsp vanilla flavored milk
pastel food coloring
Glaze:
1 cup powdered sugar
1 tsp vanilla extract
1-2 Tbsp water
Let’s Make It:
1. Preheat oven to 350 degrees. Lightly spray donut pans with nonstick cooking spray. Set aside.
2. In a large bowl, combine flour, baking powder, baking soda and sugar.
3. Melt butter in a small bowl. Add egg and milk. Stir well.
4. Add wet ingredients into dry ingredients and stir to combine. Divide batter between three bowls. To each bowl, add 1-2 drops of food coloring and stir. (I used one drop for each of my colors) Spoon into donut pan wells.
5. Bake donuts for 10 minutes in preheated oven. Remove from oven and let cool for 2 minutes in pan. Transfer to wire cooling racks and cool completely.
6. In a medium bowl, mix powdered sugar, vanilla extract and 1 Tbsp water. Stir well. Divide into separate bowls and add 1 drop of food coloring to each. Stir well. Dip donuts into glaze and return to rack to set.
I used pink, purple and green for my donuts but feel free to use whatever colors are your favorite! To get the pastel colors, you really only need 1 drop of food coloring for the batter and the glaze.
