I love cheese. That doesn’t always marry well with my Paleo lifestyle but I do allow myself to indulge from time to time. One of my favorite cheeses is goat cheese. I love it in salads, pasta and so many other dishes too. I had some gorgeous, fresh strawberries recently and I was torn with what to do with them…besides eat them. I ended up making strawberry goat cheese crostini and it was the perfect Spring lunch.
The goat cheese in this is whipped to make it extra light and airy. Add in a little lemon zest for the perfect amount of tang and you have the base for hundreds of great recipes.
Strawberry Goat Cheese Crostini Ingredients:
1 loaf french bread, sliced diagonally
1 Tbsp olive oil
2 cups sliced strawberries
4 oz goat cheese
2 tsp lemon zest
1 cup balsamic vinegar
1/4 cup brown sugar
Let’s Make It:
1) Heat oven to 325 degrees. Brush one side of bread with olive oil and place on baking sheet. Toast for 2-3 minutes.
2) In a small saucepan, combine balsamic vinegar and brown sugar. Bring to a boil over medium heat and then reduce to a simmer. Simmer for 15-20 minutes or until mixture coats the back of a spoon. Let cool.
3) With a mixer fitted with the whisk attachment, beat the goat cheese until light and fluffy. Fold in lemon zest.
4) Spread goat cheese on bread pieces and top with strawberries. Drizzle with cooled balsamic glaze. Enjoy!
These would make the absolute perfect crostini for a bridal shower or baby shower! I plan to take them to one of our upcoming winery picnics too! I know they are going to be a huge hit with everyone.
