School is back in session here and so we’ve added homework and a few other activities into our mix. Doing lots of dishes and making meals that require a lot of work are totally out of the picture. I am loving one pot meals more and more right now as we try to squeeze every extra moment of time outside in possible before the weather turns cold. I shared this sweet potato and turkey one pot recipe awhile back over at Mom 4 Real and I wanted to share it with you here too.
This recipe is super simple but is packed with flavor! A good friend of mine posted she was making something like it on her Facebook page one night and I was totally inspired to try it. I made a few slight changes to her recipe and it has become a family favorite. While it is easiest to use a wok for this recipe, a large saute pan totally works in a pinch.
- 1½ lbs ground turkey
- 1 tsp Chinese five spice powder
- 2 sweet potatoes, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, finely chopped
- 2 tsp oil
- 2 medium tomatoes, diced
- 4 Tbsp soy sauce
- 2 Tbsp lemon juice
- ¼ cup raisins {optional}
- In a large pot or wok, heat oil over medium-high heat. Add onion and garlic. Saute for 5 minutes or until softened. Add tomatoes and cook until slightly browned.
- Add turkey and cook, stirring to crumble until done. Add Chinese five spice and stir well. Add soy sauce.
- Reduce the heat to low and add sweet potatoes to pan. Cook until soft; about 10 minutes
- Remove the pan from the heat and squeeze lemon juice over dish. Stir in raisins if using and serve over rice.
I love the flavors in this recipe and they are even better the next day as lunch leftovers. I think you could easily play around with the spices in this too and maybe go for a more Indian flavor.
