You know what happens when you have 12+ adults and just as many kids over to your house on a Sunday evening? You sort of forget to confirm that everything for your Monday blog post is in order. So, that is why this lovely post is coming to you so much later than usual. We’ll call it the Super Bowl effect.

With Christmas morning always being crazy hectic, I like to have a few make ahead breakfast recipes that I love to be able to make in the days before. That way, we wake up to a breakfast that requires minimal work and, if needed, can just cook while we check out what Santa brought everyone. Of course, I use these make ahead breakfast recipes all throughout the year too.

Every Christmas, I make a breakfast casserole. It is the perfect thing for us to let cook on Christmas morning while we gather around the tree see what Santa has brought. My favorite version is one that I can put together the night before and pop in the oven when I first wake up.
As I focus on healthier choices, I find myself swapping out things like potatoes for sweet potatoes and skipping bread all together. Knowing I will be eating plenty of homemade donuts and chocolate fudge on Christmas day, I figure I should also have a healthier option like this Paleo Overnight Breakfast Casserole on hand as well.

I am going to share a secret with you. I am not an eggnog fan. For whatever reason, I never really fell in love with it. I think eggnog is just like that annoying/endearing relative that you see every Christmas. You either LOVE him/her and think they are the most endearing person. Or, you have zero love for him/her and they become super annoying.

One thing that blogging has brought me is an introduction to lots of other blogs and even actually meeting some of the faces behind those blogs. One of my favorite things to do is to cook and bake for my family. In my life my motto is “keep it simple.” I don’t have time every night to cook a full course meal or spend countless hours in the kitchen. One of go to “must-haves” to make dinner a bit more special is homemade rolls or muffins. I especially like making muffins because they don’t require any time to rise like some recipes for rolls do. I love all the variety of muffins there are- you can have sweet, spicy and even savory. They can compliment any meal.

Have you noticed that so many things these days seem to be some crazy concoction of flavors? I was out the other day and saw strawberry caramel chocolate pretzel flavored ice cream. Now, I love all of the flavors sure and do enjoy some flavors mixed together {salted caramel or strawberry lemonade anyone?}. But, sometimes I feel like more traditional flavors like vanilla get a bad rap. They get labeled as boring or plain. Well, I’m going to #TakeBackVanilla and it starts with these delicious vanilla pancakes and blueberries.

Mathlete is a scone lover. Every time we go to the coffee shop or pick up pastries for breakfast, he always chooses scones. I had never really thought about making my own scones until I was chatting with a blog friend of mine about ways to use her awesome basil simple syrup. I decided right then that I was going to try my hand at making strawberry basil scones with a basil glaze.

Breakfast is one of those tricky meals for me. I just can’t eat a donut or pastry and be satisfied. I need some protein and love the idea of eggs for breakfast. Working outside of the house though makes it a little difficult to actually get eggs each day. That is where egg muffins save the day. I am still in love with my Southwestern and broccoli with cheese varieties but this time around I wanted to load them up with vegetables so I made spaghetti squash egg muffins.

How much time do you get for breakfast each morning? If we are talking most weekday mornings, I get somewhere between 2-3 minutes to make breakfast before I have to rush out of the door. That doesn’t leave me a ton of options and, if I am looking for nutritious and wholesome meals, the amount of options available is even less. It turns out that there is an option for a breakfast on the go in under 2 minutes that is not only delicious, but also includes quality ingredients like real cheeses and fresh eggs along with high quality sausage, ham and chicken.
