Oreo cookies are one of those things you will almost always find in our house. We buy the little snack packs in the giant size from Costco to put in lunches and will usually have just a regular package in the house for the random sweet snack. At the store the other day, I saw the new Limeade flavor and knew I had to try them. Of course, as I do with most Oreo flavors, I decided “bake” with them and made coconut lime Oreo truffles using the new flavor.

So, we had a brief bit of amazing weather over the last weekend where it was actually cool enough for a light sweater in the evenings. I loved every minute of it. Of course, being summer, it didn’t last long and we are right back to super hot temperatures. When the weather gets that way, I crave cool drinks and icy treats for dessert. We got through a lot of milk here in the Just Us Four house. Like 3+ gallons of milk each week. Chocolate milk is a hot commodity too because we all love it. I was in the store the other day and saw that TruMoo now makes Chocolate Marshmallow milk and it totally got me in the mood for milk and cookies. Even though we are in the middle of the polar vortex, my daughter is still begging for ice cream, milkshakes and other frozen treats so I decided to combine those items and make her a s’mores chocolate smoothie as a treat using the TruMoo Chocolate Marshmallow milk. Sadly, our store was sold out of the Chocolate Marshmallow flavor but we used the regular chocolate this time around. I know this recipe will be even more amazing with the Chocolate Marshmallow version!

Father’s Day is this weekend…yes, I know, it came up crazy fast! I started prepping for Father’s Day last month so the holiday wouldn’t sneak up on me like it has in the past. Plus, I wasn’t sure when exactly my knee surgery would be so I wanted to ensure Mathlete got a proper celebration.
I love to cook and, well, Mathlete loves to eat so I wanted make him a delicious meal that I knew he would enjoy and that featured one of his favorite things: pineapple. His love for pineapple runs so deep that he will actually order the fruit cups for the kids at restaurants just so he can eat their pineapple. He is in trouble if they ever develop a love for it!
We started with pineapple teriyaki burgers and finished with some delicious pineapple “butter” cake for dessert.

The boozy baking continues here at Just Us Four. I couldn’t just stop with the whoopie pies so I decided to try out some cupcakes too. After all, cupcakes are where my love of boozy baking originated.
After a few {dozen} texts with Liz, I settled on trying red velvet cupcakes first. She was very supportive and assured me that I couldn’t really mess this up. I mean…I was using wine and nothing is bad with wine 😉
