Let’s talk zoodles…you know, noodles made out of zucchini. I got a spiralizer back when I started Whole30 and I fell in love. Zoodles are a great noodle replacement and, with such a mild flavor, you can put them into just about anything. My favorite right now is making Thai zucchini noodle salad to replace the yummy sesame noodles I typically get.

It is menu planning day again! If you missed week 1 of our new menu planning series, be sure to check it out. It is full of amazing easy recipes too. This week, I am in New York for two conferences so my menu planning definitely needs to be quick and easy. That is one of the reasons I love our meal plan full of easy dinner recipes. I don’t even have to think about what to make but just pull the recipes and make my grocery order. Life is crazy around here. Can you tell considering it the evening and you are getting a post from me instead of my normal 7am posting?! With school out and activities and camps starting, our schedule is kind of hectic as we try to settle into a good rhythm. That means dinner needs to be quick and easy to make sure it actually gets made versus a take out order placed. Oh, and I don’t want a lot of dishes to clean up either. Mondays during the summertime are always a little tougher. We spend a ton of time outdoors enjoying the pool or just hanging with friends so it is always a little harder to get back into the grind of the office. Of course, it doesn’t help when I also have wine slushies around the house either. So, in addition to resetting myself back into work mode, I also try to reset my body back in better eating mode. In our house, we do paleo meals Monday through Friday and then allow ourselves to indulge on the weekends. To me, it really is the best of both worlds. I don’t have to give up my cocktails and nachos, but I still give my body really good, real food for most of the week. This week, chipotle chicken with avocado salsa is on my menu.
