You guys…it is Paleo Monday! For me that it is totally a thing as I reset after my free eating weekends and get back on track for my week of paleo eats. Today, I am sharing with you one of my current snack obsessions. I have probably mentioned before that my four year old is totally obsessed with guacamole. If you have met us in person, you know it is quite the spectacle. He will eat guacamole {or more recently just plain avocados} every day if given the change. I love guacamole myself but not quite that much! I’ve been trying to change it up for him from time to time and recently made a tropical guacamole that he absolutely loved!

So far, I’ve been light on the pumpkin recipes here this year. Of course, the internet is blowing up with just about anything and everything pumpkin. I love pumpkin and have definitely been cooking/baking it with recently. Now that the weather is warm and the days are long, we spend a ton of time outdoors. Sometimes we have a BBQ or other type of party planned but most of the time we are just hanging around watching the kids play. After a little while, what we have for snack is usually where the conversation turns. I am always looking for something that tastes great, is good for you and is also something the kids will eat. On a recent, gorgeous morning, I decided that snack time would be the perfect time to introduce them to my new favorite snack bars.
