Red velvet cheesecake brownies are hands down my favorite type of dessert. I love it when Valentine’s Day rolls around because it means that red velvet is so much easier to find. Of course, for me, red velvet treats have to come with cream cheese or they just aren’t “right.”

Weeknights around here are crazy. I get home just in time to cook dinner and then it is time to check homework, take showers and get the kids in bed. I like to spend as much quality time with the kids as I can so I aim for meals that are delicious but easy to make. Right now, the only thing my four year old will eat with a spoon is guacamole so I have to make sure we have some finger friendly foods on the table too. I spend a lot of time trying to think outside of the box to ensure he gets more than just chicken nuggets and French fries. One of my favorite ways to get vegetables into him {and his sister} is to mix them with some of their favorite foods. That is how I created these turkey, spinach and macaroni bites.

We keep a pretty hectic schedule around here which means I don’t get a ton of time to myself. It also means that treats and sweets are typically shared at least 3 ways. I love my kids and family but sometimes a little “me” time is definitely in order. I am also trying to really watch what I eat and limit high sugar sweets though. The frozen yogurt bites we typically make are a HUGE hit with the kids so I decided to try making some dark chocolate frozen yogurt bites which are perfect for me!

Every year, after we’ve recovered from the holidays, Mathlete and I start talking about what our next social event is going to be. Sure, my birthday is in early February but we usually like to have a low-key get together at our house before then. The logical choice is a party to watch the Big Game since a) we love football and b) it is the first major social event of the year. He is in charge of TV stuff and I am in charge of food. Because everyone is so interested in the plays being made on the field, it can be hard for the food to get much attention. It is no secret that I am a HUGE fan of Thai food. From Thai Butternut Squash soup to a host of other things, we eat Thai inspired dishes a lot in our house. Mathlete spends a lot of time begging me to make/eat something other than Thai inspired dishes. So, when I was dreaming up recipes to serve at our upcoming party for the BIG GAME, I knew I wanted to bring a Thai influence into at least one of the game time food options. Our party will be filled with mostly men so I knew French fries would be a hit and decided to make Pad Thai French fries.
