Have you ever been relaxing on your couch or in bed and get a call that “surprise” you are going to have a visitor for dinner? Or maybe your in-laws decide to drop in for a little visit? This time of year those unexpected visits come a lot more frequently than they do any other. While I always love a chance to visit with friends and family, it can be a little stressful to throw something together on short notice when my to do list is already full of other “get ready for the holidays” tasks. We are ticking away the days until Thanksgiving at a fast pace. It is almost scary to think it will be here in just a few weeks. Now is the time when most of us are thinking about our menus, selecting recipes and finalizing shopping lists. As you work on yours, I have a great recipe that you should consider making a spot for on your table: quinoa stuffing with pancetta.
The dressing {or stuffing depending on where you are from} is my favorite part of the Thanksgiving meal. I like to try all different versions and you can sometimes find two or three on our table for the holiday. This quinoa version is perfect for anyone who wants or needs to be gluten free.

Bacon Macaroni and Cheese Bites

Every year, I host a Christmas party where we invite all of our family and friends to come and celebrate with us over drinks and food. There are times when Mathlete and I plan to go out to a nice dinner alone and never end up making it because of schedules or babysitter problems or life in general getting in the way. It is those times that I like to have a few “fancy” dishes that look like they came from a fine restaurant but are really easy to to make at home. I recently make beef tips with béarnaise sauce, made with white wine vinegar, and roasted asparagus for just one of those nights.

Every year, we host a big Christmas cocktail party. I think about it all year and really put a TON of effort into putting it together. For me, party food has a few requirements: taste good, look good and be easy to eat without utensils. It doesn’t hurt to be something that a lot of guests are at least mildly familiar with too. When, I was prepping for an upcoming party, I was searching for things to make that I knew would be a hit and would also be easy to eat. These spicy spinach artichoke stuffed mushrooms immediately came to mind.
