August is always so crazy hot and humid here. The sticky weather makes it hard to think about eating anything that requires cooking. I tend to turn to salads all the time because they are cool and refreshing. I always want some protein with my salad too but hate the idea of heating up the kitchen to cook it. Let’s talk zoodles…you know, noodles made out of zucchini. I got a spiralizer back when I started Whole30 and I fell in love. Zoodles are a great noodle replacement and, with such a mild flavor, you can put them into just about anything. My favorite right now is making Thai zucchini noodle salad to replace the yummy sesame noodles I typically get.
