August is always so crazy hot and humid here. The sticky weather makes it hard to think about eating anything that requires cooking. I tend to turn to salads all the time because they are cool and refreshing. I always want some protein with my salad too but hate the idea of heating up the kitchen to cook it. We have to face it. The first day of school is coming. For some of us, that may be a good thing and for others it may be something that we aren’t looking forward to so much. I am somewhere in between. Going back to school sets us into a predictable routine but it also brings a TON of extra activities that we don’t have to fit in during the fun, summer months. During hot weather months, I tend to turn away from hot lunches like soups or casseroles. They all still taste good but a nice cool sandwich {like this one} or a salad tends to my lunch of choice when it is so hot outside. I love salads with lettuce but for some reason, when I make them at home, they just don’t do it for me like a restaurant salad. So, I stick to pasta salads or vegetable centered ones like this succotash salad.

One of the huge perks of working from home a few days a week {well, besides the easy commute} is the ability to have breakfast and lunch at home. If you weren’t already sure, I love to cook and I get bored very easily with deli sandwiches and frozen meals I can pop in the office microwave. I don’t have a lot time to put together a fancy meal or anything but I can squeeze out a freshly made sandwich or breakfast muffin. The other day, I was craving chicken salad and my basil plant is growing on hyperdrive so I ended up making pesto chicken salad. Now, this salad was amazingly delicious but unfortunately just doesn’t look nearly as good as it tastes so you have to trust me on this one.

Picnic season is in full force here because the weather is nice {not too hot yet} and it is such a great time to be outside. We are so lucky to have a bunch of different places to go for picnics around here and we really try to take advantage of them whenever we can. Of course, sometimes we just like having sandwiches and other typical picnic fare at home for lunch too. Last year, I shared one of my favorite sandwiches and I wanted to bring them back this year because they are just so delicious. I actually had one of this balsamic chicken sandwich for lunch today and I was reminded exactly how tasty they are!
