I didn’t travel much as a kid. My family stuck close to home for vacations {definitely not a complaint…just a fact} and tended to focus more on staycations and spending time with local family members. On the opposite end of that spectrum is my husband who spent his summers traveling all over the country and some international travel too. Even in their retirement, his parents continue to travel the globe. They have inspired me to create a must visit list of travel locations. One of the top places on that list is Tuscany. Until I have the chance to go, I settle for bringing Tuscany to my home through delicious Italian inspired meals like one pot shrimp marinara.

School started today. I’m pretty sure all the moms in my neighbor let out a sigh of relief mixed with a twinge of stress. Sure, we get back on a regular schedule now but that schedule gets infinitely busier thanks to homework, after school activities and all the other stuff that comes along with school starting for the year. It makes the regular stuff like cooking dinner just a little bit more difficult. Thankfully, we can all embrace one pot meals like this paleo one pan Italian chicken to make dinner go a little smoother.

Ok, you guys…I am about to give you the easiest and most delicious weeknight meal you can make. A bonus: it is paleo too {if you care about that kind of thing}! Today starts the arrival of friends for Christmas which means my kitchen will be busy from now until New Year’s Day. I love it because I love cooking and sharing food with my friends and family. While I may prefer something like a butternut squash and sage pasta and Mathlete likes the sausauge and pepper version, we can all agree that pasta is what we want for dinner. In my dreams, summer is a time to slow down and relax. Days are spent lounging by the pool and nights are spent with delicious dinners on the deck. I’m a good dreamer, right? Reality is far different around here. Gymnastics practices are longer, camp carpools are added into the mix and getting dinner on the table becomes so much harder. Oh, add the heat into that mix and turning on an oven or stove and cooking just loses its luster. That is where the beauty of something like this sausage and pepper one pot pasta comes into play. It is one pot and a meal that cooks in under thirty minutes. Sound too goo to be true? Well, you definitely aren’t dreaming 🙂
