Double Chocolate SNICKERS Brownies

Every year, after we’ve recovered from the holidays, Mathlete and I start talking about what our next social event is going to be. Sure, my birthday is in early February but we usually like to have a low-key get together at our house before then. The logical choice is a party to watch the Big Game since a) we love football and b) it is the first major social event of the year. He is in charge of TV stuff and I am in charge of food. Because everyone is so interested in the plays being made on the field, it can be hard for the food to get much attention. So, I wanted to wow everyone with some delicious food and started off with double chocolate SNICKERS® brownies.

Pad Thai French Fries

It is no secret that I am a HUGE fan of Thai food. From Thai Butternut Squash soup to a host of other things, we eat Thai inspired dishes a lot in our house. Mathlete spends a lot of time begging me to make/eat something other than Thai inspired dishes. So, when I was dreaming up recipes to serve at our upcoming party for the BIG GAME, I knew I wanted to bring a Thai influence into at least one of the game time food options. Chipotle Chocolate Truffles

Combine chocolate with the smoky flavor of chipotle peppers for some delicious Chipotle Chocolate Truffles. They are the perfect no bake holiday party food!

Of course, that happened 3 days from our annual holiday party which was totally stressful. I immediately had to rethink all of my holiday party recipes to limit how much of it needed oven time. Easy Apricot Meatballs

Hosting events during the holidays {or any time} can really be stressful. There is the menu planning, guest counts and so many other things to think about. Finding a few items that you can use instead of having to make everything from scratch can be a true game changer. My favorite “holiday hack” is using premade meatballs and then dressing them up with a delicious sauce to totally transform them into the perfect party snack. A recipe that is always a hit at parties is my easy apricot meatballs.

Every year, we host a big Christmas cocktail party. I think about it all year and really put a TON of effort into putting it together. For me, party food has a few requirements: taste good, look good and be easy to eat without utensils. It doesn’t hurt to be something that a lot of guests are at least mildly familiar with too. I’m a pumpkin lover. I actually eat pumpkin all year round and not just during the fall. But, when fall hits, I start adding pumpkin to just about everything {like cookies, dips, french toast and even hummus}. My most recent pumpkin tinkering came when I was making a queso dip for an upcoming fall party. Usually I just make my world’s best queso dip {seriously, that is not an exaggeration} but I wanted to try something new. So, I made pumpkin queso dip instead.
